INGREDIENTS
- 5 eggs, boiled
- 20ml Mayonnaise (I used my Homemade Mayonaise)
- 2 tablespoons Dijon Mustard
- 1/2 teaspoon ground white pepper
- 2 slices of organic bacon
- 2 cloves garlic
- pinch of salt
These little “devils” are a wonderful snack to enjoy on your own or serve as an appetizer when friends come over.
The first time I had them was with American friends who introduced us to them as a snack with a glass of wine. Since then I have made this recipe and often have them as a snack during the day or with my lunch. Besides being super delicious they help me feel full for a long time.
Steps:
- Heat a large skillet over medium heat. Cook bacon 5-6 minutes per side or until very crispy. Remove the bacon and add in the minced garlic. Fry in the fat until golden brown and aromatic.
- Halve your eggs and gently remove the yolks. Add yolks to a bowl and mix with mayo, mustard, pepper, garlic. Mince up the bacon and add it to the bowl as well. Mix well.
- Use a teaspoon to fill the egg whites with the fried garlic and bacon yolk mix.
Serve:
Serve as a snack during the day, with your lunch or as a snack for friends popping by. Besides being super delicious they help you feel full for a long time.
Anything special to remember:
Make sure to find bacon with no additives and sugar. This is a tricky one, but it is doable. Ask at your local butcher or supermarket.
