Garlic Devils Eggs

INGREDIENTS

  • 5 eggs, boiled
  • 20ml Mayonnaise (I used my Homemade Mayonaise)
  • 2 tablespoons Dijon Mustard
  • 1/2 teaspoon ground white pepper
  • 2 slices of organic bacon
  • 2 cloves garlic
  • pinch of salt

These little “devils” are a wonderful snack to enjoy on your own or serve as an appetizer when friends come over.

The first time I had them was with American friends who introduced us to them as a snack with a glass of wine. Since then I have made this recipe and often have them as a snack during the day or with my lunch. Besides being super delicious they help me feel full for a long time.

Steps:

  1. Heat a large skillet over medium heat. Cook bacon 5-6 minutes per side or until very crispy. Remove the bacon and add in the minced garlic. Fry in the fat until golden brown and aromatic.
  2. Halve your eggs and gently remove the yolks. Add yolks to a bowl and mix with mayo, mustard, pepper, garlic. Mince up the bacon and add it to the bowl as well. Mix well.
  3. Use a teaspoon to fill the egg whites with the fried garlic and bacon yolk mix.

Serve:

Serve as a snack during the day, with your lunch or as a snack for friends popping by. Besides being super delicious they help you feel full for a long time.

Anything special to remember:

Make sure to find bacon with no additives and sugar. This is a tricky one, but it is doable. Ask at your local butcher or supermarket.
