Green Hulk Salad with peanutbutter dressing

  • 1 broccoli head
  • Half a cucumber
  • 1 spring onion
  • 100grams of salted peanuts
  • 1 teaspoon of chilli pepper
  • 4 tablespoons black sesame seeds for decoration


  • 3 tablespoons of peanut butter
  • 2 tablespoons Tamari sauce
  • 1 teaspoon of sesame oil
  • ½ teaspoon of Sukrin Gold (can be left out)
  • 2 tablespoons of lime juice
  • 1 small fresh chilli
  • 1 tablespoon rice vinegar (or light vinegar / balsamic vinegar)
  • ½ teaspoon of freshly ground ginger
  • 4-5 tablespoons water

The Green Hulk Salad is a wonderful light, yet very tasty salad that will accompany almost any dish wonderfully. The creaminess from the peanut butter dressing gives it just the right kick and even make your children eat broccoli :)



  • Bring all the ingredients in a blender. Blend until dressing is smooth - approx. 30 seconds.


  • Divide the broccoli head into smaller florets. Cook them quick in lightly salted water, approx 2 minutes.
  • Cut the cucumber into small pieces
  • Wash the broccoli in cold water making the cooking process stop completely. The broccoli must have a bite.
  • Cut the spring onions in thin slices.


  • Lay broccoli, cucumber and drizzle the salad with the dressing.
  • Top with spring onions, salted peanuts, chilli peppers and sesame seeds.
  • Enjoy :)

Anything special to remember:

Remember to get a good quality organic 100% peanut butter. This is one of the places to make sure to check the ingredients list. You can make it yourself too. Grind the peanuts, add a little water if to stiff.

Tamari sauce can be changed into a good quality soy sauce.
