2 cans of drained artichoke hearts, roughly cut
75ml Mayonnaise (I used this Homemade Version)
125ml Sour Cream
80 grams grated parmesan cheese
1 chopped medium-hot jalapeno (I used a green one)
1 finely chopped spring onion
1 Tablespoon lemon juice
A pinch of salt and pepper
This Tasty Artichoke Dip makes a wonderful party starter dip with crunchy raw vegetables on the side or as a side dish for your main. The spiciness from the jalapenos combined with the creamy, cheesy taste is a match made in heaven.
- Preheat oven to 200 degrees.
- Mix all ingredients together in a bowl.
- Transfer mix into a baking dish and bake for approx. 30 minutes or until light brown on top.
Serve as a party starter snack with raw vegetables or as a side dish to your main dish.
I served it with roasted turkey legs.
Can be served cold too but surely more interesting warm.
Anything special to remember:
I prefer to make my own Mayonnaise – you will be surprised how easy it is to make. Here is the recipe.
For the days where time is not there, I encourage you to get a good quality mayonnaise made out of clean ingredients and olive oil.
The same goes for the artichoke hearts. If you go for the ready-made in a can version, like I did in this recipe, make sure to go for the ones without any additives.
If you prefer to make everything from scratch, you can boil fresh artichokes for 20-25 minutes and remove the heart when they have cooled down.
Artichoke hearts are loaded with nutrients. They are said to improve liver and digestive health, ease symptoms of irritable bowel syndrome and are rich in antioxidants.
